We at the Nanro Foundation are dedicated to the globalization of Korean cuisine and the empowerment of future culinary professionals. Below is the summary of our recent research and educational content development project.
1. Research Objectives
- Core Goal: To develop comprehensive educational content that highlights the value of Korean meat culture and fosters professional talent.
2. Research Period & Timeline
- Period: May 1, 2023 – September 30, 2023 (5 Months)
Project Milestones:
- May: Research planning and preliminary interviews (20–30 locations) to establish hypotheses.
- June: Expert lectures covering 5 pork and 5 beef locations, history & humanities, breeds, butchery/fabrication, and meat science.
- July: Completion of experimental design.
- August – September: Culinary cooking tests.
- October: Final report drafting and compilation of the Grill Master theory and practical curriculum.
3. Research Outcomes
- Publications: Nanro Grill Master Educational Textbook.
- Evaluation Framework: Nanro Grill Master theory, practical exams, and standardized assessment criteria.
- Media: Comprehensive educational video series.
